Mild onions - Lézignan onions go back a long way, probably first grown in Persia. The Egyptians revered them, placing them in tombs and at the centre of their diet. Pliny the Elder claimed they were a source of health and long life. They have been grown in Lézignan since at least the 17th c.
Fig eaters, "Bécos figos", the people of Nézignan l'Evêque, are proud of their history. Since Francis I, and maybe before, this village has been standard-bearer for the fig, as shown by the restored painting in the Musée d'Art Sacré. An experimental orchard has over 80 varieties of this noble specie from Asia Minor, which loves Mediterranean heat and dryness. Its digestive, laxative, mineral and anti-inflammatory properties have been known since Antiquity. Cooked or raw, after a meal or with a meat dish, the flavoursome fresh fig melts in the mouth.

A kind of mince pie shaped like a cotton-reel, introduced in the mid-18th c. by the Indian cooks of Clive of India when he stayed in Pézenas, served warm at the start of a meal, with a glass of white wine - dry (like Picpoul de Pinet) or sweet (like St-Jean-de-Minervois Muscat or Rancio). Sold in all pastry shops in town, it keeps well for a fortnight in the fridge. The Très Noble et Très Gourmande Confrérie du Petit Pâté de Pézenas, 6 rue Four de la Ville, controls the quality of the product and has protected it by registering it at the INPI.

A local speciality of unknown origin. Sugar is formed into a stick and flavoured with essences (aniseed, mint, coffee, lemon, etc.). It keeps for many months. Just one firm, Boudet, makes it now and it is sold in all local pastry shops and groceries. You can Sample it in a shop on Place Gambetta in the town centre, and visit the factory in the morning free of charge from 1st June to 15th September, from 9 a.m. to 11.30 a.m., from Monday to Friday. Groups over 10 persons only with previous booking.
